Pumpkin Spice French Toast Casserole

This Pumpkin Spice French Toast Casserole is the ultimate holiday morning meal. It is quick to put together, can be assembled the night before, and doesn’t require standing over a griddle all morning. It has the perfect pumpkin spice flavor and deliciously cozy custardy texture. The perfect dish to serve at your next holiday breakfast or brunch!

Ingredients
 
 

French Toast

  • 4 eggs
  • 1 can pure pumpkin
  • 1 cup oat milk
  • 1/2 cup Chobani Oat Pumpkin Spice Creamer
  • 2 tbsp maple syrup
  • 1 tsp vanilla
  • 1 tsp cinnamon
  • 1/4 tsp salt
  • 1 loaf Dave's Killer "Raisin The Roof" Bread
  • 1/4 cup pecans optional
  • 1/2 cup raisins optional

Oat Crumble Topping

  • 1 cup old fashioned oats
  • 1 tbsp chia seeds
  • 1 tsp cinnamon
  • 1/4 cup maple syrup

Instructions
 

  • Lightly spray a 9×13 pan with nonstick cooking spray. Set aside.
  • In a large bowl, combine eggs, pumpkin, milk, creamer, maple syrup, vanilla, cinnamon, and salt. Whisk to combine.
  • Pour 1/4 cup of pumpkin mixture into bottom of 9×13 pan.
  • Slice loaf of bread into 1-inch cubes. Place bread cubes into 9×13 pan. If using pecans and raisins, sprinkle them on top of the bread cubes.
  • Pour the rest of the pumpkin mixture over top of the bread cubes.
  • Cover your pan with a lid, foil, or plastic wrap and place in the fridge for at least 30 minutes and up to overnight.
  • When you are ready to bake it, preheat the oven to 350F. While oven preheats, set the Pumpkin Spice French Toast Casserole on the counter.
  • Bake uncovered for 30 minutes.
  • While casserole is baking, combine oat crumble ingredients in a small mixing bowl. Stir to combine.
  • After 30 minutes, take casserole out of the oven and sprinkle oat crumble on top.
  • Place back in the oven and bake for an additional 15-20 minutes, or until the middle of the casserole no longer jiggles and the edges of the casserole are lightly browned.
  • Remove from the oven and allow the casserole to cool for 10 minutes. This will also make it easier to cut.
  • Top with plain Greek yogurt, fruit, nut butter, chopped nuts, or maple syrup. Enjoy!
