Garlic Parmesan Mashed Cauliflower

I like to think of them as an “addition” and a unique way to add variety to your diet. No need to take out potatoes OR pasta. But it can be fun to try something new…and trust me, you’ll thank me later for this one!

Ingredients
  

  • 1 large head cauliflower quartered
  • 5 garlic cloves smashed
  • 1 cup chicken bone broth no salt added
  • 1/4 tsp salt
  • 1/8 tsp black pepper
  • 1/2 cup parmesan cheese shredded

Instructions
 

  • Add cauliflower, garlic, chicken bone broth, garlic, salt, and pepper, to a large pot over medium-high heat. Cover pot with a lid and cook 10-15 minutes until cauliflower is tender.
  • Remove from heat and blend until smooth with an immersion blender OR add to a food processor or blender and pulse until smooth. You can also mash by hand.
  • Once the cauliflower is mashed sprinkle and stir in the parmesan and add seasonings to taste. Serve immediately.
