Teriyaki Roll Bowl

A quick, no-fuss teriyaki roll bowl made for busy days! Simply throw together fluffy jasmine rice, browned ground turkey coated in teriyaki sauce, and whatever fresh toppings you have on hand like crunchy carrots, cucumber, chives, and creamy avocado. It’s a simple mix-and-match meal that comes together fast but still tastes fresh, balanced, and satisfying.

Ingredients
  

  • 1 lb ground turkey (I used 93/7)
  • 1.5 cups jasmine rice cooked according to packaging
  • 10 oz shredded carrots
  • 1 cucumber diced
  • 1 avocado diced
  • 4 tbsp fresh chives chopped
  • 1/2 cup teriyaki sauce I used the "Primal Kitchen" brand
  • salt and pepper to taste

Instructions
 

  • Prepare jasmine white rice according to the package instructions. Once cooked, fluff with a fork and set aside.
  • In a skillet over medium heat, cook ground turkey until fully browned and no longer pink, breaking it up as it cooks.
  • As the turkey is cooking, dice the cucumber and avocado into bite-sized pieces.
  • Once the turkey is cooked through, drain any excess liquid if needed. Add your Primal Kitchen Teriyaki Sauce (or preferred teriyaki sauce) and stir until the turkey is evenly coated and heated through.
  • Add a base of jasmine rice to each bowl. Spoon the teriyaki ground turkey over the rice and top with cucumber, carrots, avocado, chives, and teriyaki sauce as desired, and enjoy!
