Ingredients
  

  • 2.5 cups fresh pineapple finely diced
  • 1 cup bell pepper finely diced
  • 1/2 cup cilantro roughly chopped
  • 1/4 cup red onion finely diced
  • 2 tbsp jalapeño finely diced, seeds removed
  • 1 clove garlic minced
  • juice of 1 large lime
  • salt and pepper to taste

Instructions
 

  • Using a medium-sized cutting board and a sharp knife, dice the pineapple and red bell pepper into small, bite-sized pieces. Finely chop the jalapeño, cilantro, and garlic.
  • Add the diced pineapple, red bell pepper, jalapeño, cilantro, and garlic to a medium-sized bowl.Squeeze the juice of one fresh lime over the mixture and season with salt and pepper to taste.
  • Gently toss everything together until well combined, making sure the lime juice and seasonings are evenly distributed.
  • Let sit for about 10–15 minutes before serving to give the flavors a chance to come together. Serve with tortilla chips or spoon over your favorite tacos, bowls, or grilled proteins!
