Loaded Burger Bowls

These Loaded Burger Bowls are the perfect way to get your burger fix with tons of fresh veggies and flavor. They are healthy and filling —a great alternative to a lettuce wrap burger!

Ingredients
  

  • 1 tbsp olive oil
  • 1 large (approximately 8oz) sweet potato sliced into "fries"
  • 1 lb lean ground beef (93/7) or protein of choice
  • 8 cups greens of choice (I used a mix of Taylor Farms Dill Pickle Chopped Kit and kale)
  • 1 cup tomatoes chopped
  • 1/2-1 cup hamburger dill pickles
  • 1/2 cup red onion sliced
  • 1 avocado sliced
  • 4 tbsp Primal Kitchen Thousand Island Dressing or dressing of choice

Instructions
 

Sweet Potato Fries

  • Heat oven to 400F.
  • Line baking sheet with parchment paper.
  • Toss sweet potatoes with 1 tbsp olive or avocado oil and a pinch of salt and pepper. Lay flat on baking sheet.
  • Bake until brown and crisp on the bottom, about 15 minutes, then flip and cook until the other side is crisp, about 10 minutes.

Burgers

  • Skillet: In a medium bowl, mix together beef and a pinch of salt and pepper. Form into four patties. Spray skillet with avocado or olive oil and heat over medium heat. Add burgers and cook until nicely seared and they have browned halfway up the sides. Flip the burgers and cook to your liking.*
  • Grill: Heat grill 450-500F. In a medium bowl, mix together beef and a pinch of salt and pepper. Form into four patties. Place patties on the grill and cook to your desired doneness (approximately 2-4 minutes per side).*

Assemble Bowls

  • Start with a layer of greens in your serving bowls,
  • Place burger on the top. 
  • Arrange remaining items around the burger: sweet potato fries, tomatoes, pickles, red onion, and avocado. 
  • Drizzle with dressing of choice.

Notes

*To ensure all bacteria has been killed, the FDA recommends cooking burgers to an internal temperature of 160°F.
