Add the banana to a bowl. With a fork, mash until relatively smooth.
To a saucepan or small pot over medium heat, add mashed banana, honey, vanilla extract, cinnamon powder, and salt. Simmer for 5-7 minutes, stirring constantly.
Once thickened slightly, add the mixture to a mesh strainer. Using the back of a spoon or spatula, push the contents through the strainer. (If you prefer a chunky syrup - skip this step!)
Add the strained mixture to a bowl. Add 2-4 tablespoons of water and stir until smooth.
Add syrup to your coffee or espresso (when hot for best results), and enjoy!
