Ingredients
  

  • 1 can low sodium or no salt added chickpeas rinsed and drained
  • 1 cup Kalamata olives pitted
  • 1/2 cup pepperoncini sliced
  • 1 cucumber chopped
  • 1 green bell pepper chopped
  • 1/2 red onion chopped
  • 1 pint cherry tomatoes halved
  • 1 cup cooked beets chopped (optional- adds sweetness but will turn salad purple if prepping in advance)
  • 1/2 cup feta cheese crumbled
  • 1/4 cup Primal Kitchen Greek Vinaigrette

Instructions

  • Combine all ingredients into a large bowl. Stir to combine.
