Simple to Make and Full of flavor!
First things first…I know that mashed cauliflower gets a bad rep. Many people think that it HAS to be used as a low carb alternative to mashed potatoes. But let me set the record straight and say that mashed cauliflower is NOT the same as mashed potatoes. It’s just like saying zucchini noodles taste like pasta…IT DOESN’T. But that doesn’t mean that zucchini noodles taste bad, they are actually amazing! These foods are usually advertised as “replacements”. Instead, I like to think of them as an “addition” and a unique way to add variety to your diet. No need to take out potatoes OR pasta. But it can be fun to try something new…and trust me, you’ll thank me later for this one!
Garlic Parmesan Mashed Cauliflower
Ingredients
- 1 large head cauliflower quartered
- 5 garlic cloves smashed
- 1 cup chicken bone broth no salt added
- 1/4 tsp salt
- 1/8 tsp black pepper
- 1/2 cup parmesan cheese shredded
Instructions
- Add cauliflower, garlic, chicken bone broth, garlic, salt, and pepper, to a large pot over medium-high heat. Cover pot with a lid and cook 10-15 minutes until cauliflower is tender.
- Remove from heat and blend until smooth with an immersion blender OR add to a food processor or blender and pulse until smooth. You can also mash by hand.
- Once the cauliflower is mashed sprinkle and stir in the parmesan and add seasonings to taste. Serve immediately.

Best Tip for making the best mashed cauliflower
I have experimented with this recipe MANY times and the one thing that I have found is an absolute necessity is quartering the cauliflower. If the cauliflower is chopped too much, it can retain onto more water and cook faster, resulting in a more “liquidy” mixture. Although I know cutting cauliflower can be a pain, it is well worth buying the whole thing vs. pre-cut for this recipe.

Just like many of my recipes, this one is also very versatile. I like the simplicity of flavors from salt, pepper, and garlic, although you can feel free to spice it up even more. Other spices that go well with cauliflower include chives, oregano, thyme, rosemary, and sage, just to name a few. This recipe also calls for parmesan cheese. Feel free to omit if you eat dairy free, or use a dairy-free alternative such as nutritional yeast or dairy-free shredded cheese.
