It’s officially the holiday season…and here at NUWLi – we’re leaning into all-things holiday flavors! Our Gingerbread Pancakes are made with wholesome ingredients, making them the perfect start to your festive days!


Gingerbread Pancakes
Ingredients
- 1 1/2 cups oats blended into flour
- 1/2 cup cottage cheese
- 2 eggs
- 3/4 cup milk
- 3 tbsp maple syrup or honey
- 1 tsp vanilla extract
- 1 tsp baking soda
- 1/2 tsp ginger
- 1/2 tsp allspice
- 1/8 tsp nutmeg
- 1/8 tsp salt
Toppings
- 1/2 cup Strawberries sliced
- 1 banana sliced
- 2 tbsp whipped cream
Instructions
- To a blender, add oats. Blend until a flour forms.
- To the same blender, add cottage cheese, eggs, milk, maple syrup, baking soda, and spices. Blend until smooth
- To a skillet over medium heat, use a 1/4 cup to scoop the batter onto the skillet. Cook until golden brown, about 2-3 minutes on each side.
- Add pancakes to a plate, top with fruit, whipped cream, or syrup.
- Enjoy!
