As we head into the new year, we’re introducing our Nuwli Soup Series! Throughout the next few months, we’ll be sharing twists on comforting soup classics—first up is none other than French Onion Soup! This version takes the rich, caramelized flavors you love and adds a little flair, making it nutritious, satisfying, lower-in-sodium than your typical recipe…and perfect for chilly evenings!


Gingerbread Pancakes
Ingredients
- 1 1/2 cups oats blended into flour
- 1/2 cup cottage cheese
- 2 eggs
- 3/4 cup milk
- 3 tbsp maple syrup or honey
- 1 tsp vanilla extract
- 1 tsp baking soda
- 1/2 tsp ginger
- 1/2 tsp allspice
- 1/8 tsp nutmeg
- 1/8 tsp salt
Toppings
- 1/2 cup Strawberries sliced
- 1 banana sliced
- 2 tbsp whipped cream
Instructions
- To a blender, add oats. Blend until a flour forms.
- To the same blender, add cottage cheese, eggs, milk, maple syrup, baking soda, and spices. Blend until smooth
- To a skillet over medium heat, use a 1/4 cup to scoop the batter onto the skillet. Cook until golden brown, about 2-3 minutes on each side.
- Add pancakes to a plate, top with fruit, whipped cream, or syrup.
- Enjoy!
