Pineapple Pico

There’s something about fresh, colorful ingredients that makes a meal feel a little more exciting, and this Pineapple Pico is exactly that! The combination of sweet pineapple, spicy jalapeño, fresh veggies, and lime makes for a bright and flavorful topping that comes together in just a few minutes.

I love recipes like this because they’re an easy way to add more fruits and vegetables to a meal while also bringing in tons of flavor. Pair it with tortilla chips for an easy snack, or use it to top tacos, grilled chicken, salads, or bowls. It’s simple, versatile, and definitely one to keep in your back pocket!

Pineapple Pico

Packed with fresh fruits and vegetables, this sweet and spicy Pineapple Pico is an easy way to add color, flavor, and freshness to any meal! Juicy pineapple, crisp red bell pepper, fresh cilantro, and a little jalapeño come together with zesty lime for the perfect balance of sweet, tangy, and spicy. It’s quick to make, incredibly versatile, and the perfect addition to tacos, bowls, grilled chicken, or your favorite tortilla chips!

Ingredients
  

  • 2.5 cups fresh pineapple finely diced
  • 1 cup bell pepper finely diced
  • 1/2 cup cilantro roughly chopped
  • 1/4 cup red onion finely diced
  • 2 tbsp jalapeño finely diced, seeds removed
  • 1 clove garlic minced
  • juice of 1 large lime
  • salt and pepper to taste

Instructions
 

  • Using a medium-sized cutting board and a sharp knife, dice the pineapple and red bell pepper into small, bite-sized pieces. Finely chop the jalapeño, cilantro, and garlic.
  • Add the diced pineapple, red bell pepper, jalapeño, cilantro, and garlic to a medium-sized bowl.Squeeze the juice of one fresh lime over the mixture and season with salt and pepper to taste.
  • Gently toss everything together until well combined, making sure the lime juice and seasonings are evenly distributed.
  • Let sit for about 10–15 minutes before serving to give the flavors a chance to come together. Serve with tortilla chips or spoon over your favorite tacos, bowls, or grilled proteins!
