Simple Mediterranean Chickpea Salad
Ingredients
- 1 can low sodium or no salt added chickpeas rinsed and drained
- 1 cup Kalamata olives pitted
- 1/2 cup pepperoncini sliced
- 1 cucumber chopped
- 1 green bell pepper chopped
- 1/2 red onion chopped
- 1 pint cherry tomatoes halved
- 1 cup cooked beets chopped (optional- adds sweetness but will turn salad purple if prepping in advance)
- 1/2 cup feta cheese crumbled
- 1/4 cup Primal Kitchen Greek Vinaigrette
